Olive oil, like Yogurt, has evolved within the American dietary scene from a voiceless extra to a leading role. Upon a recent visit to my Italian family's favorite Salumeria in New York City's Little Italy, Alleva, the oldest cheese store in the United States (circa 1892), I realized how much the awareness of the dietary and health benefits of olive oil has evolved since I was a little boy.
